Apfel Kuchen (Joan Puleo)
Apple Mixture (can be prepared in advance)
Peel and slice 4 or 5 apples (I use MacIntosh) into a large bowl; add sugar,
cinnamon and nutmeg (No specific amounts, just whatever you would like…to taste.) and mix well.
You can do this ahead of time and keep in fridge for a day or 2 until you are ready to make the cake)
- 2 C sugar
- 2 Tbsp butter
- 1&1/3 C milk
- 2 eggs (beaten)
- 2 C flour
- 2 tsp baking powder
- ½ tsp salt
- 2 tsp vanilla
Mix the sugar and butter together by hand; add beaten eggs and with an electric
hand mixer mix well; add milk and mix well.
Mix flour, salt and baking powder together and add to milk mixture and mix thoroughly.
Add vanilla and mix well.
Add apple mixture and mix the whole batter well (by hand) and pour into prepared pan.
Bake at 350 Degrees for about 40 minutes (depending on your oven it could be as
little as 30 minutes or as much as 45 minutes); Cake is done when the top is
golden brown and springs back when touched.
Sauce - Just before serving:
Mix together in small saucepan:
- 1 C sugar
- 1/3 C flour
- 2 Tbsp butter
- 1 tsp LEMON extract
- 1 & ¼ C BOILING water
add cinnamon and nutmeg (again to taste)
Stir constantly until it boils and thickens; take off heat; cut cake into
squares and top with a generous ladle of the sauce.
